One Pot Roast Chicken for the Whole Family

Baby itโ€™s cold outside... and we decided to make a delicious ๐Ÿ“ Roast Chicken, Baby Potatoes and Green Beans, for the whole family to enjoy! ๐Ÿ‘ถ


A one-pot roast chicken is simply delicious and so easy to prepare. All it needs is time in the oven...

Chicken can be introduced to babies diet from 6-8m+

Ingredients:
x 1 whole Chicken
x 1kg Baby Potatoes
x 1 cup Chicken stock
๐Ÿ‹Half a Lemon squeezed
Salt, Pepper, Paprika and Mustard Powder to taste
2 cloves of whole Garlic
A sprig of Rosemary
500g Green Beans


Method:
- Rinse chicken and place in a ovenproof pot with lid (can also use tinfoil to cover)
- add potatoes, stock, all the spices, and garlic to the pot.
- place in oven at 165โ€™C and cook for 2 hours.

The secret here is time in oven, and not too high heat... this gives you a super juicy, soft chicken, easy to blend for baby after.

After 2 hours, remove lid and grill for 10 minutes until the skin is crispy golden brown.

In a steamer, steam the green beans for a few minutes till tender. Not too long or they lose their bright green colour.

Take everything off heat, place a few pieces of chicken, potato and beans in a dish suitable for blending, using a hand blender puree food for baby to the right consistency, Stage 1 = runny, Stage 2 = Lumpy, Stage 3 = Chunky . Add a bit of water if too thick.


Sit down as a family and enjoy a hearty meal! โค๏ธ
